Let’s face it. The beginning of tailgating season is hot! The high summer temperatures are the perfect time for the tropical flavors of lime and coconut. These mini muffins deliver both! Made the night before they can be set out at your tailgate for you and your guests to enjoy while the main dish cooks. Try them at your tailgate this weekend!

Coconut Lime Mini Muffins
Makes Approximately 40 mini muffins

Ingredients:

Dry
2 cups self rising flour
1/2 cup sugar
1 cup sweetened, coconut flakes

Wet
2 eggs
1 1/4 cup milk
1 stick unsalted butter, melted
1 teaspoon coconut extract
1 teaspoon vanilla extract
2 teaspoons lime zest

Directions:
In a large bowl, add the self rising flour, sugar, and coconut flakes. Stir.

In a medium-sized bowl add the eggs, milk, melted butter, coconut extract, vanilla extract, and lime zest. Store together until eggs are beaten. Pour the wet ingredients into the bowl of dry ingredients and lightly stir until a uniform batter forms. Pour batter into greased mini muffin tins. Bake at 350°F for 15-20 minutes. Let cool and store in a sealable container. Serve upon arriving at your tailgate.
